In an older house, the difference between trim that looks custom and trim that looks applied is scribing, which means shaping the piece to follow the actual contour of the wall or ceiling rather than assuming a straight line and filling the gap with caulk. Caulk hides a small discrepancy and fails visibly at a large one, cracking open within a season or two as the house moves. Where the gap is real, the wood gets fitted to it.
